Die Gans wird oft mit einer knusprigen Haut serviert und passt perfekt zu Beilagen wie Rotkohl, Kartoffeln oder Kn\u00f6deln.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Zutaten<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 Gans (ca. 4-5 kg)<\/li>\n\n\n\n<li>Salz und Pfeffer nach Geschmack<\/li>\n\n\n\n<li>2 \u00c4pfel<\/li>\n\n\n\n<li>1 Orange<\/li>\n\n\n\n<li>2 Zwiebeln<\/li>\n\n\n\n<li>Zweige Thymian oder Majoran (optional)<\/li>\n\n\n\n<li>1-2 Lorbeerbl\u00e4tter<\/li>\n\n\n\n<li>250 ml Wasser oder Br\u00fche (H\u00fchner- oder Gem\u00fcsebr\u00fche)<\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">F\u00fcr die So\u00dfe:<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>2 EL Mehl<\/li>\n\n\n\n<li>1 EL Butter<\/li>\n\n\n\n<li>500 ml Br\u00fche oder den Bratensaft der Gans<\/li>\n\n\n\n<li>Salz und Pfeffer nach Geschmack<\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">Zubereitung<\/h4>\n\n\n\n<ol class=\"wp-block-list\">\n<li><strong>Die Gans vorbereiten<\/strong>: Die Gans unter kaltem Wasser absp\u00fclen und mit K\u00fcchenpapier gr\u00fcndlich trocken tupfen. Innen und au\u00dfen mit Salz und Pfeffer einreiben.<\/li>\n\n\n\n<li><strong>F\u00fcllung<\/strong>: \u00c4pfel, Orange und Zwiebeln grob in St\u00fccke schneiden. Diese mit Thymian oder Majoran und Lorbeerbl\u00e4ttern in die Gans f\u00fcllen. Das verleiht dem Fleisch Aroma und Saftigkeit.<\/li>\n\n\n\n<li><strong>Braten<\/strong>: Die Gans mit der Brust nach oben in einen Br\u00e4ter legen, Wasser oder Br\u00fche dazugeben. Im vorgeheizten Ofen bei 180\u00b0C etwa 3-3,5 Stunden braten (die genaue Zeit h\u00e4ngt von der Gr\u00f6\u00dfe der Gans ab).<\/li>\n\n\n\n<li><strong>Knusprige Haut<\/strong>: Um eine knusprige, goldbraune Haut zu bekommen, die Gans alle 30-40 Minuten mit dem eigenen Bratensaft \u00fcbergie\u00dfen.<\/li>\n\n\n\n<li><strong>Garprobe<\/strong>: Die Gans ist fertig, wenn die Innentemperatur des Fleisches etwa 80\u00b0C erreicht (an der dicksten Stelle des Keuls messen).<\/li>\n<\/ol>\n\n\n\n<h4 class=\"wp-block-heading\">So\u00dfe<\/h4>\n\n\n\n<ol class=\"wp-block-list\">\n<li><strong>Bratensaftbasis<\/strong>: Den Bratensaft aus dem Br\u00e4ter in einen Topf gie\u00dfen. Butter und Mehl dazugeben, umr\u00fchren und leicht anbr\u00e4unen lassen, bis das Mehl goldbraun ist.<\/li>\n\n\n\n<li><strong>Br\u00fche hinzuf\u00fcgen<\/strong>: Nach und nach die Br\u00fche oder Wasser einr\u00fchren, bis eine glatte Konsistenz entsteht. Die So\u00dfe auf mittlerer Hitze k\u00f6cheln lassen, bis sie leicht andickt. Mit Salz und Pfeffer abschmecken.<\/li>\n<\/ol>\n\n\n\n<h4 class=\"wp-block-heading\">Servieren<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">Die Gans auf einer gro\u00dfen Platte anrichten und mit Kartoffelkn\u00f6deln und Rotkohl servieren.
